I want some honest opinions on the UI here. I need to add a stamina bar in here as well, but I feel like it might be getting crowded. Do the bars seem too long? Is the text too small? Am I the only one that thinks the 0's look like 8's???

Makes sense. Maybe the line can be removed or altered into a slash so it be can be more accurate. Bars are fine depending on how much space you need for other things onscreen.
taking this into account I have remade a lot of the UI, i think it's better. the font is all similar in size and matches the pixel size of the other icons and bars. Though, now I need to fit them better to the bars. I may end up making the bars a little longer to fit the text inside.
